THIS COOKIE, OR WAFFLE., IS A TRADITIONAL BELGIAN
CHRISTMAS TREAT. THERE IS GREAT TRADITION OBSERVED
WHEN THE RECIPE IS HANDED DOWN TO THE YOUNGER MEMBERS
OF THE FAMILY. THE INGREDIENTS :
1 POUND OF BUTTER
6 EGGS
2 POUNDS OF FLOUR
1 POUND OF BROWN SUGAR
1 POUND OF WHITE SUGAR
1 JIGGER OF RUM
1 PINCH OF SALT
MELT THE BUTTER. TAKE OFF HEAT, AND BEAT IN 6 EGGS.
ADD RUM. SLOWLY ADD FLOUR AND SALT. COVER DOUGH
AND PUT IN COOL PLACE: IN BASEMENT OR ICE BOX. KEEP
THERE OVER NIGHT. THE NEXT DAY, THE DOUGH WILL BE
DIVIDED ONTO LUMPS JUST BIG ENOUGH FOR THE WAFFLE IRON.
THE DOUGH IS PRESSED INTO THE IRON, PASSED BACK AND FORTH
OVER A STOVE FIRE, AND REMOVED WHEN THE COOKIE IS DONE.
NOTHING ELSE IS ADDED; THEY ARE SWEET ENOUGH.

Lane cake

This is a cake that my mother only bakes at
Christmas. She first learned about this in the 1940's
from her mother.
Ingredients of the cake:
Two boxes of white cake mix
Seven egg whites
Prepare the cakes according to the directions on the
box, except use 7 egg whites in addition to the
required eggs in the directions.
Once the cakes have cooled, take them out of the pan,
and cut each cake in half length-wise so that there
are four layers.
How to make the icing:
Beat seven egg yolks in a large bowl before
mixing them.
In a double boiler, melt 1 cup of butter, 1/2 cup
of sugar, and 2 teaspoons of vanilla.
Once this is melted add 1 cup of crushed pineapple
and its juice.
Cook this until it is thick.
Remove from heat and add the egg yolks.
Mix thoroughly.
Then add 1 cup of raisins, 1 cup of halved cherries,
1 cup of coconut, and 1 cup of pecans.
Frost each layer of the cake and place on top of
each other. Finally frost the top and sides of the
cake with the remaining frosting.

At Easter my great grandmother would make
large cookies in the form of boys and girls
with a hard-boiled egg on the stomach. These
were called "figololi" and were supposed to
bring you good luck if you ate them. My
great grandmother was born in Malta and moved
to Detroit.

RED M&M CANDIES CAUSE CANCER.
RUMORS WERE CIRCULATING NATIONWIDE ABOUT CARCINOGENIC NATURE
OF THE DYE USED TO MAKE RED M&M'S. THIS WAS STRENGTHENED WHEN
M&M BEGAN SELLING M&M'S WITHOUT RED CANDIES. THE RED CANDIES
WERE BROUGHT BACK AROUND 1985, BUT MANY PEOPLE ARE STILL LEERY.

The Specialty

The "specialty," is an ice cream dessert created by my younger
sister. It consists of vanilla ice cream, chocolate sauce,
marshmallows, peanut butter, whipped cream, and candy sprinkles. The
chocolate and peanut butter are melted together and poured over the
ice cream. The marshmallows are then placed around the ice cream as a
border, and the whipped cream is put on to cover the whole thing.
Candy sprinkles are then scattered over the top, and the "specialty"
is completed.

Another tradition that I learned from my mother is that of
Fat Tuesday. Fat Tuesday is the day before Ash Wednesday in the
Catholic Church. Ash Wednesday marks the beginning of the season
of Lent. Many years ago the Polish people began Fat Tuesday
where they would celebrate by eating jelly-filled donuts during
this day. This symbolized the last day of eating rich, fatty
foods before the fasting during the Lenten season began.

On Christmas Eve, our family would have an unusual dessert to
eat in the middle of a cold Michigan winter. It was strawberry
shortcake. My mother would say that it will bring a little bit of
summer warmth into the bitter cold winter.

Nieman Marcus Cookie Recipe:
2 cups butter 1 tsp. salt
2 tsp. baking powder 2 cups brown sugar
2 tsp. soda 4 eggs
24 oz. chocolate chips 2 tsp. vanilla
4 cups flour 3 cups chopped nuts
1-8 oz. Hershey bar, grated 2 cups sugar
5 cups blended oatmeal
Cream butter and both sugars. Add eggs and vanilla. Mix
together with flour, oatmeal, salt, baking powder, and soda. Add
chocolate chips, Hershey bar, and nuts. Roll into balls and
place two inches apart on a cookie sheet. Bake for 10 minutes at
375. Makes 112 cookies (recipe may be halved). Measure oatmeal
and blend in a blender to a fine powder.

Submitter comment: Story has it that a lady begged to buy the cookie recipe from
Neiman-Marcus Cafe in Dallas and was refused. After several
attempts, she was told that the recipe would cost two fifty. The
lady said fine and requested the store put it on her charge
account. When the lady received her bill the next month, she was
shocked to see the total $250.00 for a cookie recipe on there.
When she questioned the store, she was told the recipe is a very
expensive one and the store would not refund her money. She was
also told that the recipe is a company secret and should not have
been sold. To get even, the lady is spreading the recipe all
over the country by mail, word of mouth, etc. She is the first
to admit she indeed learned an expensive lesson.
