THIS COOKIE, OR WAFFLE., IS A TRADITIONAL BELGIAN
CHRISTMAS TREAT. THERE IS GREAT TRADITION OBSERVED
WHEN THE RECIPE IS HANDED DOWN TO THE YOUNGER MEMBERS
OF THE FAMILY. THE INGREDIENTS :
1 POUND OF BUTTER
6 EGGS
2 POUNDS OF FLOUR
1 POUND OF BROWN SUGAR
1 POUND OF WHITE SUGAR
1 JIGGER OF RUM
1 PINCH OF SALT
MELT THE BUTTER. TAKE OFF HEAT, AND BEAT IN 6 EGGS.
ADD RUM. SLOWLY ADD FLOUR AND SALT. COVER DOUGH
AND PUT IN COOL PLACE: IN BASEMENT OR ICE BOX. KEEP
THERE OVER NIGHT. THE NEXT DAY, THE DOUGH WILL BE
DIVIDED ONTO LUMPS JUST BIG ENOUGH FOR THE WAFFLE IRON.
THE DOUGH IS PRESSED INTO THE IRON, PASSED BACK AND FORTH
OVER A STOVE FIRE, AND REMOVED WHEN THE COOKIE IS DONE.
NOTHING ELSE IS ADDED; THEY ARE SWEET ENOUGH.
