Canning foods

fruit. They did this so that in the winter months they could eat
the food they had harvested in the summer.

Spiced Watermelon Rind:

9 cups (3lbs) cubed white watermelon rind. (remove all green skin)

4 cups water (1 glln)

2 tbsp salt

5 cups sugar

2 cups cider vineegar

1 cup cold water

1 sliced lemon

1 tbsp whole cloves

1 tbsp whole all spice

1 tbsp coarsley chopped cinnamon

Cover watermelon rind with 4 cups water. Add salt and let stand minute. Drain. Cover with more cold water in sacepan. Cook, covered, over low heat until tender, about 2 hours. Drain. Meanwhile, combine sugar, vinegar and remaining 1 cup cold water. Tie spices and lemon slices in a cheesecloth bag. Drop into vinegar mixture. Boil 5 minutes. Then add watermelon rind and cook until rind is transparent - about 45/60 minutes. Remove bag of spices. Pack rind and syrup into jars and seal. For crisper rind, add 2 tbsp powdered alum to water in which rind is first cooked.

Food: Recipe

Bread and Butter Pickles

1 gallon firm cucumbers (sliced thin crosswise)

2 green peppers (seeded and sliced)

8 small white onions

Prepare 1 quart of crushed ice. Place these in layers with 1/2 cup of salt. Cover in weighted lid and place in refrigerator for 3 hours. Drain after 3 hours, add to syrup made of:

5 cups white vinegar

5 cups sugar

1 1/2 tsp turmeric

1/2 tsp ground cloves

2 tsp ground mustard seed

1 tsp celery seed

Stir mixture while heating - dissolve sugar. Add vegetables - heat slowly. Scald , DO NOT BOIL.

Place pickles in sterilized jars at once and seal.

Recipe: Apple Butter

Apples are cooked in an iron pot and a jug of cider poured over them. Stir slowly and rhythmically. When fragrant steam rises and the apples begin to bubble add sugar and spices. As the apple butter thickens, it takes on a rich brownish-red color and becomes harder to stir. It is ready to pour into containers to keep through the winter.

Preserve Sausage

Fry sausage until done. Put in jar. Allow grease to cover sausage. Grease will coalesce and seal the sausage.

Dried Apples

Slice apples into quarters.
Lay on top of barn or garage where sun rays will dry out.
Leave until all moisture is out.
Can be put in pie shells for apple pie or make fried pies.
Broken pieces of sassafras keep worms out if drying in old flour sacks.

Strawberry Preserves (Prize Winning Recipe)

2 qts strawberries
6 cups sugar

4 cups sugar over strawberries till boil, get off, cool, add another 2 cups, boil hard for 5 to 10 minutes. While boiling add 1 Tb. butter (keeps off foam to win prize).
Pour shallow pans, shake (makes plump)
Set overnight.
Put sterlized jar (if berries set overnight they will not rise to top).
Melt paraffin pour over top to preserve.
