CHRISTMAS TREAT

MANY YEARS AGO, MY GRANDMOTHER'S FAMILY SERVED
APPLES (RUSSET APPLES) AT CHRISTMAS TIME TO GUESTS.
THAT WAS THE ONLY TIME THEY HAD RUSSET APPLES. THE CHILDREN
WOULD RECEIVE ORANGES IN THEIR STOCKINGS. THIS WAS

Lane cake

This is a cake that my mother only bakes at
Christmas. She first learned about this in the 1940's
from her mother.
Ingredients of the cake:
Two boxes of white cake mix
Seven egg whites
Prepare the cakes according to the directions on the
box, except use 7 egg whites in addition to the
required eggs in the directions.
Once the cakes have cooled, take them out of the pan,
and cut each cake in half length-wise so that there
are four layers.
How to make the icing:
Beat seven egg yolks in a large bowl before
mixing them.
In a double boiler, melt 1 cup of butter, 1/2 cup
of sugar, and 2 teaspoons of vanilla.
Once this is melted add 1 cup of crushed pineapple
and its juice.
Cook this until it is thick.
Remove from heat and add the egg yolks.
Mix thoroughly.
Then add 1 cup of raisins, 1 cup of halved cherries,
1 cup of coconut, and 1 cup of pecans.
Frost each layer of the cake and place on top of
each other. Finally frost the top and sides of the
cake with the remaining frosting.

WAFER AND FOR EASTER A HARD BOILED EGG. ANYONE
WHO TAKES A BITE OF YOUR EGG OR WAFER WILL HAVE
GOOD LUCK.
