Lane cake
This is a cake that my mother only bakes at
Christmas. She first learned about this in the 1940's
from her mother.
Ingredients of the cake:
Two boxes of white cake mix
Seven egg whites
Prepare the cakes according to the directions on the
box, except use 7 egg whites in addition to the
required eggs in the directions.
Once the cakes have cooled, take them out of the pan,
and cut each cake in half length-wise so that there
are four layers.
How to make the icing:
Beat seven egg yolks in a large bowl before
mixing them.
In a double boiler, melt 1 cup of butter, 1/2 cup
of sugar, and 2 teaspoons of vanilla.
Once this is melted add 1 cup of crushed pineapple
and its juice.
Cook this until it is thick.
Remove from heat and add the egg yolks.
Mix thoroughly.
Then add 1 cup of raisins, 1 cup of halved cherries,
1 cup of coconut, and 1 cup of pecans.
Frost each layer of the cake and place on top of
each other. Finally frost the top and sides of the
cake with the remaining frosting.
