CELEBRATE NEW YEAR'S DAY BY HAVING HOG HEAD CHEESE.
ALWAYS USE THE HEAD AND EARS OF THE PIG, NEVER THE FEET AND LOWER
PARTS OF THE PIG. HOG HEAD CHEESE IS EATEN WITH CRACKERS AND SHAPED
LIKE A MEATLOAF. YOU MAKE IT BY HAND AND IT IS ALWAYS KEPT IN THE
REFRIGERATOR.

Lane cake

This is a cake that my mother only bakes at
Christmas. She first learned about this in the 1940's
from her mother.
Ingredients of the cake:
Two boxes of white cake mix
Seven egg whites
Prepare the cakes according to the directions on the
box, except use 7 egg whites in addition to the
required eggs in the directions.
Once the cakes have cooled, take them out of the pan,
and cut each cake in half length-wise so that there
are four layers.
How to make the icing:
Beat seven egg yolks in a large bowl before
mixing them.
In a double boiler, melt 1 cup of butter, 1/2 cup
of sugar, and 2 teaspoons of vanilla.
Once this is melted add 1 cup of crushed pineapple
and its juice.
Cook this until it is thick.
Remove from heat and add the egg yolks.
Mix thoroughly.
Then add 1 cup of raisins, 1 cup of halved cherries,
1 cup of coconut, and 1 cup of pecans.
Frost each layer of the cake and place on top of
each other. Finally frost the top and sides of the
cake with the remaining frosting.

A Chaldean recipe for good luck at the beginning of the new
year is called Homuth Hillue. This is a sauce made of dried
prunes and apricots with raisins, slices of almond and meat.
It is very sweet and colorful. The sauce is poured over rice
and chicken and when eaten luck will follow throughout the
new year.

Submitter comment: This dish is only made once a year to signify the beginning
the new year and to bring luck to all who eat from it.

ON NEW YEAR'S DAY, MY MOTHER INSISTED THAT ALL OF OUR
CLOTHING BE NEW. USUALLY WE SAVED A CHRISTMAS GIFT OUTFIT FOR THE
OCCASION. SHE WOULD ALSO FIX A STEAK DINNER AND WE'D USE OUR
BETTER DISHES AND SILVERWARE. THIS WAS SO WE WOULDN'T BE POORLY
DRESSED OR HUNGRY FOR THE REST OF THE YEAR.

Submitter comment: MY FATHER ALSO REMEMBERS HIS MOTHER TELLING HIM THAT WHATEVER
HE DID ON NEW YEAR'S DAY WOULD INFLUENCE THE REST OF HIS YEAR.

FOR AS FAR BACK AS I CAN REMEMBER, THE WOMEN AT OUR HOUSE HAVE
MADE TRADITIONAL POLISH CHRISTMAS COOKIES CALLED PIERNICKI. MY
NON-POLISH MOTHER LEARNED THE RECIPE FROM HER POLISH MOTHER-IN-LAW
WHEN MY AUNT DID NOT SHOW AN INTEREST IN CARRYING OUT THE
TRADITION OF MAKING THE SWEET AND SPICY COOKIES. EACH FAMILY'S
RECIPE IS DIFFERENT AND A CAREFULLY KEPT SECRET. PIERNICKI IS SO
SPECIAL THAT EATING THE DOUGH OR THE FINISHED COOKIE ENHANCES
READING COMPREHENSION! THE COOKIES ARE MADE IN LATE NOVEMBER,
USUALLY DURING THE THANKSGIVING BREAK FROM SCHOOL, WHICH IS JUST
IN TIME FOR HOLIDAY GIFT GIVING AND FOR STUDYING FOR FINAL EXAMS.

Submitter comment: OUR PIERNICKI HAS BECOME AN INSTITUTION. OUR RELATIVES LOOK
FORWARD TO RECEIVING THEIR GIFT OF COOKIES EVERY YEAR. BECAUSE
THE RECIPE IS A SECRET, IF IT IS FOUND IN A COOKBOOK, IT HAS BEEN
ALTERED BY THE SUBMITTER SO THAT HER COOKIES WILL BE BETTER THAN
SOMEONE WHO FOLLOWS THE BOOK RECIPE.

FOR THE POLISH, CHRISTMAS EVE IS CELEBRATED BY WIGILIA. OUR
VERSION OF WIGILIA BEGINS WITH THE DISTRIBUTION OF OPLATECK, OR
WAFERS, WITH WHICH WE EXCHANGE GOOD WISHES FOR EACH OTHER FOR THE
COMING YEAR. WITH EACH WISH, WE BREAK OFF A SMALL PIECE OF THE
OTHER'S WAFER. WHEN EVERYONE HAS EXCHANGED WISHES IT IS TIME FOR
A DELICIOUS MEATLESS DINNER. THIS DINNER BEGINS WITH MUSHROOM
SOUP AND FEATURES PIEROGIS, HERRING AND ANOTHER FISH, POTATO
SALAD, A GREEN SALAD, AND, SOMETIMES, WHITE WINE. AFTER DINNER,
THE DISHES ARE DONE. WE THEN GATHER AROUND THE CHRISTMAS TREE AND
NATIVITY SCENE AND EXCHANGE SMALL GIFTS. THIS IS HELD AT MY
GRANDMA'S HOUSE.

Submitter comment: WHEN MY SISTER AND I WERE VERY YOUNG, MY GRANDPA AND MY DAD
WOULD CARRY IN GIFTS WHILE WE WERE DISTRACTED. THEY WOULD SAY,
"HO, HO, HO!" AND WE WOULD RUN IN TO TRY TO CATCH SANTA. SANTA
ALWAYS MOVED TOO FAST FOR US!

SATURDAY, A BASKET IS LOADED WITH TRADITIONAL ITEMS. DECORATED
EGGS, BUTTER LAMBS, HAM, BREAD, HORSERADISH, KIELBASA, POTATOES,
CANDY, AND WINE ARE CARRIED IN A COVERED BASKET TO THE CHURCH FOR
THE AFTERNOON BLESSING. THE BASKETS ARE LINED UP NEXT TO THE

EVENTUALLY BE EATEN. IT MUST NOT BE THROWN AWAY OR WASTED.
