My father's family would eat bean soup every
Saturday.

Submitter comment: My father doesn't know the reason why other than
maybe it was because he had 12 brothers and sisters
and they couldn't afford to eat a lot.

Beer Soup (Polish - Polewka z Piwa)

1 qt. beer
4 egg yolks
4 teaspoons sugar
croutons or cheese
Bring beer to boiling point. Beat egg yolks with
sugar until lemon colored. Slowly mix half cup of
the hot beer with yolks and then carefully add yolks
to boiling beer, stirring constantly. Do not boil
because the yolks will curdle. Serve with hot
croutons or your favorite cheese.

Submitter comment: Informant learned this recipe from his mother who
lived in Poland for many years.

My grandmother learned this recipe from her brothers. They
claim to have "invented" it while they were hiding in the
woods of Poland to avoid being drafted by the Russian Army.

On Good Saturday a Greek family would go to church around 10 PM,
leaving the grandmothers at home. At 12 AM Jesus is symbolically
resurrected from the dead. The people leave church and go home around
1 AM. Meanwhile, the grandmothers were at work preparing a soup known
as "Mayiritza" which contains pieces of lamb, vegetables, eggs, and
lemon in a sheep broth. The family comes home and all eat the soup
and talk. Then red eggs are distributed and cracked while the people
say "Hristos anesti, alithos anesti", which means "Christ is risen,
truly risen."

Recipe for Flesh Beans
Make pastry (use Robin Hood Pie dough, in sticks. Box makes 3
beans). Roll it thin. Mix in bowl: 1/4 lb. flank steak, 1 diced
potato, 1 small onion, diced 1/2 carrot, diced celery, diced
mushroom. Finish thinning out on rag or waxed paper. Wrap up
bean in rag. Tie with string. Bring to boil. Lower to medium
heat for 3 hours. Turn over at least once. Allow to cool,
serve, and eat.

Submitter comment: What I found odd is cooking all the items in a rag. Grace
said it's a wonderful meal; I'll take her word for it!

Food: Recipe

Beef Tea:

1 lb lean beef, cut into small pieces. Put into a glass canning jar, without a drop of water, cover tightly and set in a pot of cold water. Heat gradually to a boil and continue this streadily for three hours, until the meat is like white rags and the juice drawn out. Season with salt to tast and, when cold, skim.

Submitter comment:

My mother used to fix this for me as a child when I was sick and couldn't keep anything in my stomach.
