FOLK FOODS. ; FOLK FOODS: FLAN

INGREDIENTS: 3/4 CUPS OF SUGAR TO MAKE THE CARAMEL. 4 CUPS OF MILK.
2 TABLESPOONS OF VANILLA, 6 LARGE EGGS, SUGAR 1/4. MIX EGGS, SUGAR
AND VANILLA WITH A MIXER AT A LOW SPEED UNTIL MIXED. WARM MILK TO BE
HOT BUT NOT BOILED. MIX THE MILK WITH THE ABOVE ITEMS. PUT IN OVEN AT
350 DEGREES. PUT THESE THINGS IN A CARAMEL DISH. PUT THE DISH IN A
HOT WATER DISH AND BAKE FOR ONE HOUR UNTIL IT IS READY.
LET IT COOL. AFTER IT IS COOL, TRANSFER THE FLAN TO ANOTHER
DISH. SERVE WITH MANDARINE ORANGES OR ANY FRUIT YOU WISH.

"POETOE" (WHISTLE CAKE)

A VENDER WOULD WALK THROUGH THE STREETS WITH A STEAM-
ING KETTLE INSIDE ONE OF HIS BASKETS. THE BASKETS HUNG
ON LONG STICK THAT WAS HANGING ON HIS SHOULDERS. WHEN
FINDING A CUSTOMER, THE VENDER WOULD MAKE CAKE IN FRONT
OF HIM. THE KETTLE WOULD HAVE BAMBOO SHOOTS COMING OUT
OF IT. IN MAKING THE CAKE, THE VENDER WOULD PUT IN RICE
FLOUR, AND BROWN SUGAR. AFTER THE CAKE WAS IN THE
BAMBOO SHOOTS FOR A WHILE, THE VENDER PUSHED IT OUT.
THE VENDER WOULD THEN SPRINKLE FLAKES OF COCONUT ON IT.
THE NAME "WHISTLE CAKE" CAME FROM THE WHISTLING SOUND
OF THE KETTLE.

WITHOUT THE HOLE, POWDERED OVER WITH SUGAR, CHOPPED MEAT WRAPPED IN A
CABBAGE LEAF CALLED GOLABKI. THIS IS TOPPED OFF WITH LODY- A KIND OF
ICE CREAM WHICH DOES NOT MELT FAST, BUT CONTAINS BITS OF CINNAMON
AND CITRON AND CANDIES.
