Recipe for Taboulli
5 cups finely chopped parsley

Colcannon is traditionally eaten on St. Patrick's Day in
Ireland. It is a mixture of cabbage, scallions, green onions, and
kale.

This is a tradition that has been handed down from my mother
and which I have in turn handed down to my children. The
tradition is that if a certain vegetable is being served to eat
and a certain person does not like that vegetable he or she has
to eat as many of the vegetables as he or she is old. For
example, if I hated peas and I am 11 years old, I would have to
eat 11 peas. This only applies to kids until they are 18 years
old. It was a good way of getting children to eat their
vegetables.

Truckpatch
Most Afro-Americans in the south during the 1930's had great
self pride. However, they had to eat. For this particular
family there were 16 people under one two-room roof shack. Okra
was always left in the ice box; it was a substitute for meat.
Neighbors would come by to bring different items grown from their
truckpatch, but would always say that they had too much and
didn't want it to go to waste. Foods such as sweet potatoes,
pinto beans and rice were brought. Everything was usually cooked
together in one pot and would last for up to three weeks. The
pinto beans were saved mostly because they were good for at least
three more swellings.

Seven Layered Salad
Break lettuce into bit size. Layer bottom of large bowl
Layer green onions - shredded slightly
Layer drained green beans (fresh -- cooked, frozen or canned)
Layer diced green peppers
Layer drained green peas (fresh --cooked, frozen or canned)
Layer boiled eggs - diced
Shred sharp cheese - layer on top
Cover with Miracle Whip "globbed" over top to seal salad
Mix Miracle Whip as needed. Do not mix completely or vegetables
will become soggy. Will last for 7 days. Add layered diced
tomatoes if desired.

Recipe for Fried Green Tomatoes
Ingredients are: 1 medium green tomato (per person), white
cornmeal, bacon drippings, salt. Slice tomatoes about 1/2 inch
thick, season with salt and pepper, and then coat both sides with
cornmeal. In a large skillet, heat enough bacon drippings to
coat the bottom of the pan and fry tomatoes until lightly browned
on both sides.
