PEEL TWELVE LARGE CLOVES OF GARLIC. THINLY SLICE INTO A
ONE QUART SAUCEPAN. ADD FOUR OUNCES OF FLAT FILET
ANCHOVIES. COVER BOTTOM OF PAN WITH OLIVE OIL. PUT ON
MEDIUM HEAT. COOK TIL GARLIC IS SOFT. DO NOT BROWN.
MASH GARLIC AND ANCHOVIES WITH A FORK TIL FINE. ADD ONE
POUND OF BUTTER. STIR TIL BUTTER MELTS AND COMES TO A SOFT BOIL.
USING A FORK, DIP CABBAGE OR VEGETABLES OF CHOICE IN MIXTURE.

GNOCCHIS

PUT ONE POUND PEELED, WASHED POTATOES IN A POT WITH SALTED
WATER ENOUGH TO COVER POTATOES. COOK TIL TENDER. DRAIN. DRY
POTATOES AND MASH THEM. MEASURE 1 3/4 CUPS FLOUR INTO BOWL.
MAKE A WELL IN THE CENTER OF THE FLUOR. PUT MASHED POTATOES
INTO THE WELL WHILE POTATOES ARE STILL HOT. MIX TIL IT IS A
SOFT, ELASTIC DOUGH. TURN DOUGH ONTO A LIGHTLY FLOURED SURFACE
AND KNEAD. ROLL DOUGH TO PENCIL THICKNESS. CUT IN 3/4 INCH
LENGTHS. BRING THREE QUARTS WATER TO BOIL IN A POT. GRADUALLY
ADD GNOCCHIS. BOIL RAPIDLY UNCOVERED FOR 8 TO 10 MINUTES TIL
GNOCCHIS ARE TENDER AND COME TO THE SURFACE. DRAIN IN COLANDER.
SERVE GNOCCHIS COVERED WITH MELTED BUTTER AND GRATED PARMESAN CHEESE.

RURAL BLACK NEW YEAR'S CUSTOM

DURING THE DEPRESSION, IN LOUISVILLE, MISSISSIPPI IT WAS
CUSTOMARY AMONG BLACKS TO PREPARE HOG JOWLS AND BLACK-EYED
PEAS AS THE FIRST MEAL OF THE NEW YEAR. IT WAS THOUGHT
THAT THIS WOULD BRING GOOD LUCK FOR THE REST OF THE YEAR.
I DON'T THINK THAT ANYONE ACTUALLY BELIEVED THAT GOOD LUCK
COULD RESULT FROM EATING A PARTICULAR MEAL. IT WAS JUST
A CUSTOMARY THING TO DO. SOMETIMES, AFTER WE CAME NORTH,
WE WOULD STILL FIX THE MEAL FOR NEW YEAR'S. AFTER I GOT
MARRIED, IN 1950, I DON'T RECALL PREPARING ANY PARTICULAR
MEAL ON NEW YEAR'S.

SENT OVERSEAS IN WORLD WAR II. BY HIS RETURN, IN 1946,
THE FAMILY HAD MOVED TO DETROIT. THE INFORMANT HAS LIVED
IN DETROIT SINCE THAT TIME.

INGREDIENTS: ONE CUP BUCKWHEAT GRITS, ONE EGG, TWO CUPS
BOILING WATER, TWO TABLESPOONS BUTTER, ONE TEASPOON SALT.
MIX THE GRITS AND EGG TOGETHER WELL AND SLOWLY COOK THEM
AND CONTINUALLY STIR. PUT IN THE REST OF THE INGREDIENTS,
COVER, AND COOK OVER A LOW FLAME FOR FIFTEEN TO TWENTY
MINUTES. WHEN DONE, MAKE SURE THE GRITS ARE DRY.

Recipe for Homos
3 cups mashed chick peas
1 cup sesame oil (tehine)
1 teaspoon salt
crushed garlic clove
crushed hot pepper (jalepeno)
1/4 cup lemon juice
Mix chick peas and sesame oil together with salt
and mix last three items together. Pour chick pea
mixture on plate and spread flat. Then pour lemon
sauce on top. You can put olive oil on top also.
Then eat with bread.
