12 POUNDS OF GRANULATED SUGAR, FERMENTING IN A TUB, WHILE SKIMMING
OFF EXCESS MATERIAL AT THE TOP, UNTIL MIXTURE STOPS
GELLING AT THE SURFACE. PUT IT IN A CONTAINER,
AND WHEN FERMENTATION
STOPS, CORK TIGHT FOR FIVE MONTHS.
